Tomatoes can be controversial but if you get them ripe enough, not grainy, not hard but sweet and with the right texture and a little bit of salt and pepper ay ay ay!

In this trend of being healthy and going eco we throw words like sustainability in together with everything and I have felt the need to clarify it in the travel industry and, even though The World Tourism Organization defines it a certain way:

¨Sustainable tourism as development that meets the needs of present tourists and host regions while protecting and enhancing opportunity for the future. It is envisaged as leading to management of all resources in such a way that economic, social, and aesthetic needs can be fulfilled while maintaining cultural integrity, essential ecological processes, biological diversity, and life support system.”

I came across Cassidys Adventures description which I feel appeals more to me, my way of thinking and expressing myself: ¨Sustainable travel means leaving a destination the way you found it so tourism can be maintained in the long-term. Sustainable travel can minimize this downfall and loss of authenticity. It can even provide benefits.¨ This means taking care of place without any negative alterations but what if we take it a step further and produce positive alterations?
