Tortilla

Tortilla de patatas. Spanish tortilla. Spanish Omelette.
We just call it Tortilla.

Tortilla. Such a simple and delicious dish. I love it.
It’s one of the few recipes you can find throughout all of Spain.

It’s, believe it or not, quite a controversial dish.


If you travel North we have them less cooked through, if you travel to the South they tend to be sturdier, thicker and cooked all the way through.

What’s controversial about it?
Everything! Should it have onion or not is one of the biggest debates!
There’s tortilla competitions! Everyone knows the best tortilla is the one your mother makes.

I’m going to share a very simple recipe.

By all means use this as inspiration to add what you would like!

Ingredients

  • 300ml mild olive oil
  • 500g Potatoes, soft starchy one
  • Salt to taste
  • 4-5 fresh eggs
  • Tip: have an egg for every 200g of potato
  • Optional: caramelized onions

Method

  1. Wash potatoes, peel and chop in irregular same sized pieces
  2. Poach potatoes in the olive oil at a low temperature so as not to fry them. Don’t cover them so you don’t get any condensing drops falling into the pan.
  3. When you can put a knife into the potatoes, remove from heat. Drain them and keep the oil. Let the potatoes cool down so as not to cook the eggs.
  4. Whisk the eggs.
  5. Add the potatoes to mixture. And add another egg if you see too many potatoes
  6. Let the mixture sit for a couple of minutes. A good time to open a bottle of wine!
  7. Heat up a non-stick pan add some of the oil you have left over.
  8. After a minute or two, remove from heat and put a flat plate on top of the pan and flip it over.
  9. Quickly slide the uncooked side onto the pan and cook the other side.
  10. Depending on how cooked through you want it leave it for less or more time.
  11. Enjoy!
